A tasty No cook appetiser from Russia
(For Tomato or Cucumber)
1lb/454g Whole Tomatoes (or cucumber)
1 tbsp Sea Salt
Young oak leaves, Blackcurrant leaves or vine leaves to line jars
1pt water
6 black peppercorns
2 cloves garlic (whole and peeled)
2/3 sprigs of dill
A hand full of coriander seeds (optional)
Clean sterilised glass jars
(The amount of jars you will need will depend on their sizes)
Line the glass jars with oak, blackcurrant or vine leaves
Make brine by adding one table spoon of sea salt to the pint of water.
Dissolve the sea salt in the water heating if required.
Layer fruit in the covered jars or pots with the 6 black peppercorns, 2 cloves garlic, 2/3 sprigs of dill and a hand full of coriander seeds if being used to taste per pound of fruit
Add the brine to the jars to cover all the ingredients then seal with the lids or cover and secure with an elastic band, string and greaseproof paper.
Tomato pots will be ready after 10 days and 21 days for cucumber
The leaves that line the pots keep the cucumber or tomatoes fresh and crisp
You can use earthenware pots and cover with greaseproof paper if they don’t have lids
